Dinner for 3

Yesterday we had fun out on the grill, again. We all wanted different items for dinner. Mianna wanted Salmon with my honey mustard sauce. I wanted shrimp and Rich wanted both shrimp and beef kabobs. We played with a new recipe that is so awesome. I'll try to post the recipe for the shrimp. The honey mustard sauce is my favorite that I got off of food tv one day.
Basil Shrimp



Salmon with Brown Sugar and Mustard Glaze

If you want the recipe for the beef,it's not too hard. just cut up some top serloin and season it with essence. I make enought essence to fit in a large sprinkling container and I keep it on had. You can put any type of vegetable on the kabob. i like onions,bell peppers(yellow) and even mushrooms.


Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme


Combine all ingredients thoroughly and store in an airtight jar or container

Night out

Last night we went out to party at our first night club in FL. We ended up at this place called Mardi Gras, where they were having a Hawaiian tropic competition. We met up with Richie's friend and his sister. While we were there Rich ran into an old friend from his last command. It was nice to be out drinking and dancing with friends.

BBQ

We finally BBQed the chicken after 24 hours of sitting in the marinade and it was finger lickin good.

BBQ Chicken,Ribs or Sushi

Today we had decided on eating BBQ chicken for dinner, so I got the marinade all ready. This is my new favorite marinade for those of you who want to try it. Well it's not so new, but it's just a little different then my usual. Anyways. I don't really use measuring cups, so you just have to eye ball it. But I start off with Soy sauce (Kikkoman), white vinegar, one lemon, water, onions, garlic or powder if you’re lazy. I put more soy than vinegar and just a little bit of water to balance out the saltiness and sour. You can add a few T of sugar if you like. I squeeze the juice of one lemon and then I take that same lemon and cut it up into slices and add it to the sauce for more flavors. I use black pepper to taste and one medium onion. You can put a couple cloves of crushed garlic or a few T of garlic powder. Then I just mix it all up and taste it. Adjust it if you need, by adding more soy or vinegar or what ever. But it should taste real good. Then I just toss the chicken in and set and forget it. The best way to cook this is on an outside grill, but if you have and indoor one, that might work too.

So after all that hard work, we started to have our daily 4 o clock showers and thunderstorm, so it usually clears up in about 30 minutes or so, but today it just stuck around a little longer and it started to get dark. So the chicken is still in the fridge and we will have some good finger licking chicken tomorrow.

Rich took us out to Dick's wings, but they ran out of ribs and I was really craving ribs, after not being able to have bbq chicken. We had ordered our appetizer and just decided to eat that and then run to the Japanese restaurant across the street. Mianna was really craving some sushi and that sounded so good too. I was just so hungry at this point; that I would have ate the duck we ran into outside the restaurant. LOL.

So we finally end up at the very first Japanese restaurant that we ever ate at in Jax's, knowing how good this place was, I was ready to tear down. So we ordered spicy tuna, regular tuna, California roll and some tempura. Mmm mm mmm, it was all-good. I'll have to take pics of the chicken that we will have tomorrow. ehhehe.

Sunshine and thunder

This sunshine state has some really crazy weather. Today I witness this unpredictability. The day started off as a really sunny and humid day. We figured this would be perfect weather to grill out. So we got inspired by some foodtv.com watching, and decided on a Korean theme. We planned to make Korean style BBQ ribs and some kimchee. All of a sudden it began to rain and out here it is very common to have rain and sunshine together. This place reminds me of Hawaii so much in that aspect of the weather. Well along with the light rain and sun, we started to hear thunder. So we are experiencing our first sunny thunderstorm. It's too crazy to look outside and see this bright sunny sky with thunder in the air. We decided to stay in and make this a super lazy Saturday.

So I ran around the house cleaning up and taking picture. Take a glimpse of our apartment. I still have to clean up the 3rd bedroom. I heard from my cousins that they could be heading out to visit us, sooner then we expected, so I might have to work on that 3rd room, this week.
